A mate of mine made barley beer (without hops) years ago.
When you're crushing barley for cattle feed you get the dust taste at the back of your mouth that you struggle to get rid of. This barley beer had exactly the same effect. You'd end up putting pretty well anything in it to give it a decent flavour, not just plain barley

I can see why they used to add pine needles (or gunpowder) or whatever

people have tried a lot of things previously! hops were a saviour (especially for transatlantic journeys with beer)
